Lemonade without refined sugar -Rejoice! Plus the added kick of ginger and mint. This is a really refreshing drink; simple to make and wonderful on a hot summer day.
This recipe comes from a cookbook we've in the past, The Healthy Kitchen by Rosie Daley and Dr. Andrew Weil. It's filled with good, healthy dishes: granola, frittata, eggplant dip, soups, salads, and one of the best turkey burgers I've ever had -and I'm not just saying that because I took the photo of the burger :-) (page 202 if you're so inclined).
Lemon juice 1 cup, 244g -freshly squeezed
Honey 1/2 cup, 166g
Water 2 cups, 474g
Ginger slices 1/4 cup, 20g -fresh; no need to peel, you're not eating the ginger.
Mint leaves 1 bunch -fresh</li>
Ice cubes 4 cups, 456g -we put a mint leaf in each ice cube
makes 4, 10 ounce servings
Make mint leaf ice cubes.
Put the lemon juice, honey, ginger, and 3 mint leaves in a large pitcher and stir. If you want a strong mint and ginger taste, press them to release flavors. We chose not to do this because we prefer a more subtle flavor.
Add the water and stir until honey dissolves, then add the ice.
Serve with a cute straw and viola! you've got a cool, refreshing drink.
