We are not food saints, far from it. Heck, here in Encinitas you can get fried beef rolled tacos 24 hours a day. And believe me, we partake.
On those nights when we want something fast, tasty and better for us, this is our go-to-homemade-fast-food-meal (with variations as seasons change).
Tilapia : Spinach : Heirloom Tomatoes
Mom and I go to church Sunday evenings and it's usually on that night that one of us says: "Fish and a veg?" If it wins, we head to the market; if the idea is squashed, we head to Bety's Tacos (mmm, mmm, good!).
Today at the NutriMirror office, mom asked Pam and Jim if they had a go-to easy meal and sho 'nuff they do. For the Rays it's ground chicken breast patty, spinach, and some other veggie (right now tomatoes) - ha!, sound familiar? Gotta love those summer tomatoes!
If you would like to give our meal a try, here are the deets:
Salt + pepper the Tilapia, then saute in a bit of olive oil.
In a saute pan cook spinach with a touch of water, add salt + pepper.
Slice tomatoes, add salt and pepper.
Voila!
