This is a gorgeous soup, as well as simple to make. A few fresh ingredients are all you need. I love this quote from Mark Bittman the author of Kitchen Express where this recipe was found: "Pretty much a perfect combination of flavors, as long as you're generous with both lime juice and cilantro." Chicken, lime, and avocado Soup
Chicken breast 12oz, 376g
Olive oil 1tsp, 5g
Onion 11oz, 300g
Garlic 1tsp, 3g
Lime zest 1tsp, 2g
Chicken stock 6 cups, 1440g
Avocado 1/2 cup, 73g
Lime juice 1oz, 31g
Cilantro 1/2 cup, 8g
6 servings
Cut chicken into 1” chunks and sauté in the olive oil.
Chop the onion and mash the garlic, then add to the chicken with the lime zest. Cook for a few minutes.
Add the stock and bring to a simmer.
Add the avocado, lime juice and cilantro just before serving.
